Easy New Year's Shrimp

It’s fun to celebrate different holidays and food traditions from around the world.  This dish, Easy New Year’s Shrimp, is one you can serve to help celebrate Chinese New Year – a holiday which started last Monday and continues for 15 days. This year is the Year of the Monkey, one of twelve animals from the Chinese zodiac.

There are many food traditions followed for the celebration, and it is thought that eating special foods will help bring good luck and happiness for the New Year.   For example, I’ve been told that shrimp are symbolic of happiness and good fortune, and uncut long noodles are symbolic of long life.

This dish comes from my friend E-Ping Medalia – it’s super easy and delicious with total active prep time of about 10 minutes. And, if you aren’t celebrating the Chinese New Year, it makes an easy addition to your recipe collection that you can make at any time of the year

Easy New Year’s Shrimp (serves 12)

  • 1 pound cleaned and pre-cooked cold large shrimp
  • 2 tablespoons toasted sesame seed oil
  • 2 tablespoons low ­sodium soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon grated garlic
  • 1 Fresno chili, finely chopped (substitute another pepper if Fresno chilis aren’t available)
  •  fresh cilantro leaves

Directions:

1.     Rinse shrimp and place in a large bowl.

2.     In a small separate bowl, mix the sesame oil, soy sauce, vinegar and garlic.

3.     Pour the sauce over the shrimp.

4.     Sprinkle the chopped chilis over the shrimp and mix well.

5.     Cover and place in the refrigerator for approximately 20 minutes.

6.     When ready to serve, transfer the shrimp to a large serving platter and garnish with cilantro.

Nutrition information per serving:  70 calories;  3 grams fat; 0.5 grams saturated fat; 80 mg cholesterol;  460 mg sodium; 1 gram carbohydrate; 0 grams dietary fiber;  9 grams protein (values are approximate).
