Once in a while you just need something crunchy and sweet to finish off a meal. This recipe for biscotti, made with olive oil instead of butter to reduce the saturated fat, is a nice choice for a change of pace. These cookies are tasty, but are a little high in calories, so if you are watching your weight, you probably want to eat just one as a serving.
These biscotti provide 3 grams of protein per cookie, which comes primarily from the almonds, eggs and the whole wheat pastry flour. In comparison, three Oreos provide less than 1 g of protein. If you decide to have one of these biscotti instead, and want to increase the protein further, add a glass of nonfat milk. If you prefer almond milk, look for a brand which has been fortified with protein. (Although almonds do provide some protein, almond milk does not). Regular almond milk doesn’t provide much calcium either, so if you are concerned about your calcium intake, look for one that is fortified with calcium.
