One of my favorite chefs is Jacques Pepin. I love some of his recipes and find myself making certain ones over and over again. I especially like his recipe for flourless chocolate cake which I discovered maybe 5-6 years ago. However, I have a problem with his version since it is made with many of the ingredients that I generally try to avoid — butter, whole eggs, lots of sugar. They taste delicious, but are not something you can eat very often if you are trying to follow a healthier diet.
What to do? I got to work in my kitchen and came up with an alternative recipe which is healthier and tastes good too. In fact, when I first made this recipe I did a “blind” taste test with my son, and he said he actually liked my version better because it came out a little heavier and smoother than the original (apologies to M. Pepin).
